The Best Beet Cookies (healthy sweets)

If you say 'I don't really like sweets' you are going to miss out on some fun activities! Healthy and social is the name of the game. Beet cookies are a healthy alternative to cookies and they have an extra kick of nutrients. A couple fun facts about beets:

 

-Due to nitrates found in beets, some research suggests that beets can improve stamina. If you're an athlete you may want to consider eating more beets.

 

-Nitric oxide, also in beets, can improve blood flow to the brain creating better brain function. 

Ingredients:

- 1 egg

- 1/4 cup honey (I suggest local honey)

- 1/2 cup almond butter & or Sunflower butter (I mix both to fill up the 1/2 cup)

- 1/3 cup almond flour

-1/4 tsp baking soda

1/2 tsp vanilla extract

-1/2 a beet (shavings)

-Dash of cinnamon

-Dash of salt

 

Instructions:

Mix all the ingredients in a mixing bowl. I use beet shavings from making a juice! So after I make a juice with beets in it I use the extra beet fibers for the cookies (if you do not juice you can make this without beets and it is still very good). After mixing, take a tablespoon and scoop out one cookie at a time. Roll the cookie mix into a ball and put it on a cookie sheet. Preheat the oven to 350 degrees. Put the cookies in the oven, set a timer for 8-10 minutes, and enjoy!
